Soups and stews are hearty and warming. They make a cold winter day feel cozy and they warm you from the inside out. I was experimenting with Farro, an ancient grain I hadn't used before. Thinking of a barley soup, I pulled together ingredients I had on hand, in addition to my newly purchased Farro, and put together this super tasty Farro White Bean stew. Feel free to adjust the liquid content to suit your liking, more if you want it soupier, less for a stewier consistency. I love the texture of the Farro. With the potatoes and beans, it makes for a very satisfying dinner. Serve with warm, (vegan) buttered bread for a cozy meal on a cold Chicago day.
