Yesterday, I was out running errands on my scooter. While it started off pretty nice at almost 50 degrees and some mist, the wind picked up over the couple hours I was out and I got pretty cold. All that was on my mind was coming home and making a nice rich, hot bowl of soup. It that soup time of year and I'm focused on enhancing my soup repertoire. Check out this easy, low mess, creamy Butternut Lentil soup. I love the color and texture, it just makes me happy. Have it with warm bread, slathered in Miyokos butter for a totally hearty lunch or dinner. Stay tuned, I intend to grow my Soups category over the next few wintry months.
