It can also taco too in my humble opinion! If you are looking for creative ways to use the things you stocked up on last week, I recommend popping them onto a pre-made pizza crust or into a tortilla. Trader Joes makes these rectangular pre-made pizza crusts, all you have to do is top and put into a pre-heated oven for about 10 minutes. There are 2 crusts in a pack and last night I slathered one with tomato sauce, mashed potatoes and sautéd kale and the other was topped with refried beans, salsa and roasted peppers and corn. To make the peppers and corn, I roasted sliced peppers and corn (tossed with oil and spices like cumin, garlic, salt and chili powder) in a 425 degree oven for about 25 minutes. Sprinkle both pizzas with nutritional yeast and pop into the oven (follow package instructions). I think kids would have fun making this with you! All of this took me about an hour to make, but I did make my own mashed potatoes, salsa and refried beans. Using store bought items will mean dinner is ready even faster. Enjoy!
